My cockatoo is itching she’s not dancing screming and she’s talking less

She might be molting. If she is going through a heavy molt, she has new feathers growing in that she will be preening, and she may be grumpy. If she is eating well and acting well otherwise, just let her finish molting and she should get back to her normal behavior. But if you feel like she is not feeling well, you know her best and you should take her to an Avian Vet to be sure. They can get seriously ill very quickly so if you think a bird is sick, it’s best to seek Vet care immediately.
